White Bean Chili



Here's a recipe that is delicious, cheap and easy to make. It's part of the Nourishing Frugal Food Carnival over at The Nourishing Gourmet! My husband hates going meatless, but even he loves this chili.


White Bean Chili

1 pound white beans
1 T oil
2 onions, chopped
4 garlic cloves, minced
8 oz chopped green chilies
2 tsp cumin
1 1/2 tsp oregano
1 1/4 tsp chili powder
6 C chicken broth
1 C shredded cheddar

Soak the beans overnight, then rinse thoroughly.

Saute onions 10 minutes in oil. Add garlic, chilies, and spices. Saute 2 minutes.

Add beans and broth. Boil until beans are tender. This will be at least 3-4 hours. Add water as needed. Once beans are tender, add shredded cheese.

Garnish with additional shredded cheddar, sour cream, and/or salsa if desired.

That sounds delicious! I love white beans; I don't even think I would miss the meat, but my husband would. Do you think it would taste good with ground chicken added?

Yum! Sounds very good. Do you think that this would still taste good without the cheese? (I can't have dairy right now) I also love white beans. They have great texture and flavor.
